New Equipment for Red Deer Meat Processor Means More Alberta Meats for Consumers


Nossack Fine Meats (Nossack), a Red Deer deli meat wholesaler, has more than 120 years of family tradition at its roots. Having shared its rich heritage with Albertans for more than 30 years, owners Ingrid and Karsten Nossack are looking to bring even more traditionally-prepared meats to their customers.

With new prospects in sight, Nossack recently approached the Alberta Meat and Livestock Agency (ALMA) to help them address opportunities with new retail businesses.

Support from ALMA helped Nossack purchase and install a thermoformer (packing) machine in their Red Deer production facility. This new machine increases the facility’s capacity to package ready-to-eat products and can now accommodate a second packaging line. The thermoformer also reduces the number of equipment changeovers for packaging size adjustments.

“The addition of the thermoformer will help us capitalize on new opportunities,” said Operations Manager, Carsten Nossack (son of Ingrid and Karsten). “We can provide more products to more Canadians, while maintaining our high-quality service and food safety standards.”

Added benefits of the thermoformer include the segregation of sensitive products (allergens/species) and streamlining the flow of production in the facility. These improvements enable Nossack to compete for new contracts with retail customers. Increased productivity will lead to increased demand for Alberta meat products.

With a confirmed productivity gain and potential increase in overall capacity by 260,000 kg, Cody Cunningham, ALMA’s Senior Manager, Industry Investments sees the equipment addition as a positive for industry. “Nossack is already a success story as a wholesale deli-meat provider. With this latest equipment addition, the company can expand the business, strengthen its sustainability, and increase their output of Alberta-based products.”
